Jody's Coleslaw

Ingredients & Recipe

Prep time 10 minutes


1/2 cabbage (I used red cabbage) finely shredded
2 peeled grated carrots
1/4 cup chopped Italian parsley
Large handful fresh mint leaves, roughly torn by hand
1/2 cored apple (skin on) cut into matchsticks
1/2 cup chopped pitted dates
1/2 freshly squeezed lemon or lime juice

Place the ingredients into a large bowl and mix. It’s ready to eat!

You can use any vegetable in your fridge. Coleslaw’s great for using up older vegetables. If you have broccoli or cauliflower, add these grated (1/2 cup). I sometimes chop 1/2 avocado into coleslaw and/or goats feta.

To add more protein, sprinkle pumpkin and chia seeds over the top.

Coleslaw is a great way to get your 9+ a day 😋
