Granola
Ingredients & Recipe
60g coconut oil
2 tsps cinnamon
300g jumbo porridge oats
100g nuts (I use cashews and walnuts) roughly chopped
50g seeds (I use pumpkin, sunflower and chia seeds)
110g cranberries & goji berries (use any dried fruit)
Preheat oven to 180C fan bake.
Melt the coconut oil in a saucepan over a gentle heat, add the cinnamon and stir.
Remove from the heat and pour over oats until mixed through. Scatter evenly over a large baking tray and bake 15 minutes.
Remove from the oven and add the nuts and seeds. Return to the oven for a further 10 minutes or until lightly toasted.
Remove from the oven and leave to cool. Stir in the dried fruit.
I add 4 tbsps of psyllium husks, optional, but so good for you!!
Store in an airtight container.
Delicious served with coconut yoghurt, blueberries and viberi blackcurrant powder.
