The Best Corn Fritters

Ingredients & Recipe

Serves 4

3-4 corncobs
2 eggs (seperate yolks and whites)
2 tablespoons flour
Pinch sea salt
Freshly ground black pepper
Cold pressed virgin olive oil

Cut the kernels off the corn cobs and place in a large bowl.

Beat the egg yolks in another bowl until light, beat in the flour, salt and pepper. Add this mix to the corn kernels and gently mix through.

Beat the egg whites in a large bowl until stiff and fold into the corn mixture.

Heat a heavy frying pan over a medium to hot heat and brush with oil (just a drizzle). Repeat for each batch.

When the pan is hot, drop the corn batter into the pan with a dessertspoon. Cook for 45 seconds - 1 minute each side.

These are delicious served with a crunchy green salad for lunch or dinner 🥰
