SALMON WITH BROCCOLINI & TOMATOES

If you are short on time this is a delicious no fuss healthy dinner or lunch to go!


Serves 2

2 x 125g salmon fillets

6 spring onions, trimmed and cut into 3 pieces

12 cherry tomatoes

200g broccolini, trimmed

1 tbsp tamari sauce

1 tsp sesame oil

1/2 tsp dried chilli flakes

1 tsp sesame seeds


  1. Preheat oven to 180C fan bake. Cover a baking tray with baking paper.

  2. Place the salmon fillets in the tray, skin side down on the baking paper, add the spring onions and tomatoes and season with lots of ground black pepper. Bake for 8 minutes.

  3. Third fill a pan with water and bring to the boil. Add the broccolini and return to the boil. Cook for 4 minutes then drain.

  4. Remove the tray from the oven and add the broccolini. Drizzle the tamari sauce and sesame oil over the fish, Sprinkle with the chilli flakes and sesame seeds and return to the oven for a further 3-4 minutes, or until the salmon is just cooked.

  5. Serve and enjoy 👌

This dish is a low-carb Mediterranean style way of eating. The secret to being satiated after a low-cal meal is to eat healthy fats. The salmon fillets are ideal for this 😊
